Hi Kyle, yep, if you can get parboiled yakisoba noodles you can just add them to the vegetables and use spatulas to chop them up into a smaller pieces (or you can cut them on a cutting board before hand). As for the yakisoba sauce, we have it here in Japan too, but I actually prefer the Worcestershire/ketchup/oyster sauce mixture to the premade stuff. If you'd rather use the premixed sauce, it will work fine.
