I've left it out here mainly to make this simpler (less ingredients), but adding some fenugreek leaves (Kasoori Methi) at the end is a great way to give the flavor a boost.

Palak Paneer is my favorite food. I am very excited to try this version too. Have you ever used fenugreek leaves in your Saag? I used to all the time but I haven't been able to find any that weren't bitter lately. It takes the dish to the next level! I learned it that way from an Indian chef in Virginia. He had trained in India and Europe.

I'm not sure how best to measure it though since it probably won't be a 1:1 swap with fresh spinach.
