I'm so happy to hear you and your family enjoyed this! One tip for the future. Rice vinegar is not a suitable substitute for sake. The sake is added because it contains a lot of amino acids which creates the taste of umami, but it is not sour. Rice vinegar does not contain many amino acids and will not give you the taste of umami and the sour taste will make the sauce taste wrong.

The alcohol in the sake burns off when you cook it, but if you still want to substitute something I would recommend just adding 2 tablespoons of extra dashi.

My daughter had been wanting to have/make this for years! We don't eat pork so we used chicken. One of us could not have Sake or Mirin so we did replace that with just rice vinegar.
It was super tasty for such a simple basic dish. This one will be a fall back food for us for sure!
