Hi LaBad, because it's not cooked for very long, cheaper cuts will end up pretty tough. I'd recommend using a good steak cut, and it needs to be very thinly sliced. Try checking your closest asian market for beef for Shabu shabu or sukiyaki.

Hi Bkhuna, I've lived in Japan for almost 9 years now and I'd never heard of this until a reader requested a recipe for it. It comes together much faster than Oyakodon because the beef cooks so fast. I hope you enjoy it!
