Hi Lindsay, sorry to hear you didn't enjoy it. The taste of soy milk tends to vary widely by brand, and it's best to use one for this that is rich and creamy without much of a soy bean taste. I used Japanese Kikkoman for this recipe (not to be confused with the American Kikkoman Pearl brand, which has flavorings added). You could also just use a full fat dairy milk.

At the end of the day I'm sure it will taste delicious, but if you want a water/fat emulsion with the maximum amount of collagen in it, you don't want to preroast the bones. As for adding schmaltz, this is a bad idea unless you plan to blend it in with an emulsifier such as lecithin at the end, otherwise the fat will just float to the surface.
