Hi Nadir, I left the shrimp paste out of this to keep it vegetarian. You can add it in when you fry the paste while making the curry. Hope that helps!

I noticed that there is no shrimp paste included in ingredients for the green curry paste. Would you add shrimp paste later when making curry or miss it out completely.?

Absolutely lovely. The flavors are infinitely more vibrant than using a pre-made paste, and it's not that hard. Worst part was getting the Galangal into a good paste, that stuff is TOUGH.
