Hi Nadine, I'm so sorry to hear it didn't work out. I think the most likely culprit is that the piece of pork you used did not have enough fat and connective tissue. When you braise meats for a long time, most of the moisture leaves the muscle tissue and if there isn't anything to replace the liquid, the meat will end up tough and stringy. The trick is to use a cut of meat with a lot of marbled fat, and connective tissue (gristle). These cuts would normally be very tough if cooked briefly, but through the magic of time and temperature, the fat and connective tissue break down, lubricating the meat, and making it fall apart tender.
