Since I'm the only one in this household that will eat pea soup - more for me. It's great that you pressure cooked the ham bone for stock and I do the same for ham bones, chicken and turkey carcasses. For beef stock, I use beef back ribs, deeply brown them in the oven and then pressure cook with a splash of Kitchen Bouquet (a habit I acquired from my mother). Amazing flavor! Pressure cooking definitely intensifies the flavor of the stock in a much shorter time that can not be replicated by simmering the bones for hours.
