Thanks Anne! Yes, you can assemble the bowl (with the rice, egg, and chicken) the day before and keep it covered in the fridge. Then just reheat it in the microwave for between 1-2 minutes (depends on the wattage of your microwave oven), and garnish.

Mirin is too sweet, plus Hon-mirin is not real mirin (it's made with alcohol and corn syrup). If you use the hon-miring, omit the sugar. Otherwise water will work fine.
