Hi Denise, that sounds like a beautifully luxurious chowder! I'll have to try it sometime😁

So no arguments when I suggest it for dinner ,only fight is to who has the last serve lol.

Yes, using the salt water did not make sense to me but I couldn't understand how the 1/2 cup of water turned into 2 cups. I guess the clams hold more inside that I thought!

The idea is to get the grit out of the clams and using that water will reintroduce it into your stock. 1/2 cup of fresh water is all you need to steam the clams open, which release their own juices to make the stock.

How do I start with 1/2 cup of water to steam the clams open and end up with 2 cups of clam broth? Are you suggesting using the super salty water that I made to soak the clams in over night?

I found a way to get them clean. After you add the salt to the clams add some corn meal too, for some reason the clams do not like it and they spit it out of the shells together with the sand that is inside, leaving them very clean.

Shellfish spoil much faster than other seafood, which is why they're usually sold live in their shells. The other problem with pre-shucked clams is that you lose a lot of the juice contained in the clams when they're shucked (see the photo in step 4). This is what gives the soup it's flavor and without them the soup will be bland.

I've seen them. How many pounds would I buy for this recipe?

While we have clams, I love the cockles!! I'm going to make this using cockles instead of clams.
