In the grocery store, I never purchase fish that has been "previously frozen", but instead ask for still-frozen fish which they have to trot out of the freezer in the back room. This is fish that has been flash-frozen on the boat shortly after it has been caught and is the next best thing to fresh. Still, it's not as perfect as fresh, and a light curing like this might be totally the way to go for my sashimi; I am looking forward to trying it.
