As for the cherry substitutions that sounds great! It might be good with some dried cherries too.

Would you suggest any changes if I used that instead? In fact, now that I think about it, a local brewer makes a great hard apple-cherry cider, and I imagine that it would also be incredible if cherries and the cherry cider were substituted for the apples. If I were to give that a go, do you think it would work to make straight substitutions?
