I stumbled on your side while looking for shu mai recipe. Stopped at it because your pictures and writing are wonderful.

Can't resist making a comment on this dish because I am Vietnamese, originally from Hà Nội no less.

Our phở gà does not have star anise and garlic. In fact both of our famous phở (bò and gà) do not use garlic.

Phở gà is very simple hence the light taste.

You are right on target with grilling the ginger and onion. We use shallots as they are more fragrant. We also use green onion in the stock to give it more fragrant. I usually stuff a bunch in the cavity of chicken then leave them in the soup when I remove the chicken.

Also, Northern Vietnamese have a saying: a chicken calls for lime leaves. And that is the secret to the genuine fragrance of Hà Nội phở gà. Take come young lime leaves (best is the kaffir lime leaves, called Thai lime leaves at some Asian markets) or Meyer lemon's leaves if you don't have access to lime leaves, slice very thin and garnish your bowl of phở. Voilà! You can also drop a few leaves in the soup while preparing it too.

So everybody can take some soup in a bowl, add mint and cilantro. Then some ladles of the soup and chicken meat. Add some rice noodles and a lemon part...... nyum

Being the yuongest of 12(6girls and 6 boys), cooking was done by my mom and older sisters.  Now that I am married and have 4 kids of my own, they love pho. Going out get expensive and we don't live close to places that serves pho, so I end up learning to make  pho bo.  I gave up after several attempt.  So now try cooking pho ga, first time....it's great!  Thank you and my kids will thank you too!
