Did you let them get browned on both sides before adding the glaze? This is the key step that caramelizes the carrots, bringing out more flavor and sweetness. As for the name, you can read more about it in the FAQ, but in a nutshell, I don't cook with recipes, I leave the ingredients and instructions for dishes I make to help others learn the techniques they need to build a foundation that helps them learn to cook without recipes too.
